Super Quick Fried Rice

Needing something to eat but not much time or want to spend little effort? This Super Quick Fried Rice Recipe can feed an army for next to nothing. The secret is in seasoning your oil for that special delicious flavour.

Recipe:

Ingredients:

  • Oil or Butter
  • “Chui Chow Chili Oil”
  • Egg
  • Frozen Vegetables
  • Sliced Ham
  • Cooked Rice
  • Light Soy Sauce

Preparation:

  1. Make sure your rice is already cooked

Method:

  1. Heat oil on high heat
  2. Beat egg in bowl and fry in wok or pan
  3. Remove egg, place back in to bowl
  4. Add chili oil in to wok and fry
  5. Almost immediately add your frozen vegetables, stir and fry
  6. Tear sandwich ham by hand and place in to wok
  7. Stir and fry until satisfied that meat and vegetables are cooked
  8. Add Rice, stir and fry
  9. Add salt, pepper and soy sauce
  10. Stir and fry until nicely mixed, and you are ready to serve

Hello and welcome to Good For You Living. This video is part of the cooking basics series where I’m breaking recipes down into a simple two step process that everyone can follow. Today we are making super quick fried rice. An easy filler upperer in less than 8 minutes flat and that includes preparation. It’s yummy inexpensive and a real fast food, without the excess salt, sugar and other factory chemicals. Remember you have control of what you consume.

So let me tell you about this 2 step method, first it’s about oil and water. You separate your ingredients that you are going to cook in oil and those that you are going to cook in water. And second everything is a salad, so if you have ever made a salad before then you will be able to make this without a problem.

So I hope this is going to be good for you and let’s start cooking.

Starting with a very hot wok on high heat and add a generous amount of oil to coat the wok. And remember the first principle is about oil and water. And we are going to cook our oil ingredients first.

And our oil ingredients are an egg, chilli oil, mixed vegetables and ham. And our water intense ingredients are rice and soy sauce.

Alright first to go in, one egg beaten right up. And once the oil is very hot we out our egg in, and see those big bubbles that is what you want. Quickly mixing it so it doesn’t burn. Alright that’s good.

Let me explain here, two things are going to make your eggs nice and fluffy. First the beating of the egg to trap air into the mixture which forms bubbles, and second the very hot oil. On contact the oil is going to fry straight away and you saw the bubbles expand. That’s ready so let’s remove it, don’t worry too much about cooking it all the way through, we just want to initially turn the egg from a liquid into a solid so it doesn’t stick on other ingredients.

OK we are going to season our oil now with some chilli oil, and this flavour is going to be present in the whole of the fried rice. A good seasoned oil is one of the secrets to good cooking. Ok, don’t let it fry for too long as the spices in the chilli oil are very fine, so again we don’t want it to burn.

And in go our vegetables, give them a good mix. And remember everything is a salad so all we are doing is tossing our ingredients around like a salad. Simple right. Next we move on to our ham. I’m just using a sandwich ham that is already sliced. And just tearing it up by hand. Just demonstrating how quick and simple this is to make without any real need for preparation.

OK we are just going to let this cook until the meat and vegetables are warm. I like the meat to have a bit of a crunch to it so I’m going to fry it for a bit extra than it really needs to. Just under a minute. And here we go tossing the ingredients around like a salad.

When you are satisfied we can start adding our rice. Remember it has to be pre-cooked rice, best if it’s already cold like it was made the night before, or earlier on in the day. But if it’s just freshly made then it’s still going to work too. But it won’t work with raw grains of rice though.

At any stage we can put our egg back in. And you can see here now if the egg was still a liquid it would stick to the rice and vegetables. So we will just break it up and give it our famous mixing, giving all the ingredients a chance to cook from the bottom of the wok.

OK we are now at our final stage the salad dressing. First with some pepper and then some salt. Ok let’s give it a good mix around so the seasoning is well spread out. So we are sticking with our salad theme and our salad dressing is a really simple one of pepper, salt and soy sauce. I mean if you wanted to you could have put the salt, pepper and soy sauce in a small container to make our dressing and then pour it over our fried rice like a traditional method of making a salad. But you see how it works right? OK once that soy sauce has gone in we are pretty much done. Give it another good toss and mix. And frying it a little bit more to intensify the sauce through reduction. It’s really looking good now the mix of colours is there, the aroma is there, it’s making me really hungry.

So there wasn’t much complicated action there. All we did was add ingredients and toss them around like a salad. Remember the first principle though, it’s about oil and water. cooking your oil ingredients first then followed by adding your water intense ingredients. You’ve seen how easy it is to make so don’t let those complicated recipes stop you from treating yourself to some yummy in your tummy. And the final touch dress it up with some green shallots.

There you have it Super Quick Fried Rice. So versatile you can throw in any leftovers you have. Throw in different meats, sausages, left over vegetables, any kind of leftovers from the night before. And try different condiments, right at the start you can put in some satay paste, or some curry powder or even as simple as some diced garlic.

Have fun experimenting and start creating your own signature dish. I’ve made this one for the budget conscious in mind and used frozen vegetables. Now frozen vegetables are not the greatest but it’s better than nothing and it does have good fibre. You could make a mountain of fried rice, over 2kgs worth, that’s 4 pounds for under $5. So there are no excuses for take out every night. It’s very cheap and very fast, and you get control of what you consume.
